Baked scallops (Vieiras al horno); recipe from Sira
Ingredients for 8 people: 16 scallops, 1 onion, 100g sliced chorizo, 80g serrano ham, 50g cooked ham, a teaspoonful of paprika, parsley, lemon, breadcrumbs.
Clean the scallops well and leave them in their shells, sprinkling them with a drop of lemon. Lightly fry a the finely chopped onion in a frying pan with hot oil then gradually add the rest of the very finely chopped ingredients: chorizo, serrano ham, cooked ham and the parsley. Next, add the small spoonful of paprika, stirring well, and leave it over a low heat for more or less 10 minutes.
Once it is lightly fried, pour it over the scallops and as a finishing touch sprinkle with some breadcrumbs. Leave it in the oven for quarter of an hour and it will be ready to eat.
